EASY MUTTON SOUP | MUTTON SAARU SOUP RECIPE

Serves - 3-4 generously
Prep time - 10 mins
Cook time - 15 mins
Serving suggestion - as a soup or with rice in a meal.
Ingredients
To pressure cook
Mutton - 1/4 kg, with bones
Water - 2 cup
Turmeric powder - 1/4 tsp
Corriander powder - 4 tsp
Jeera/ cumin powder - 1/2 tsp
Tomato - 1 medium, chopped
For tempering soup
Oil - 2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 5 no
To crush with a motar
Cumin seeds - 1/2 tsp
Peppercons - 8 no
Garlic - 5 small pods
Pepper powder - 1/3 tsp
Salt - to taste
Corriander & mint leaves - 2 tbsp chopped
Method
1. In a pressure cooker, add mutton pieces, tomato, water, turmeric powder, corriander powder, cumin powder and pressure cook the meat for 15 minutes or for 10 whistles until tender.
2. In a motor add the cumin seeds, peppercorns, garlic and crush into a paste.
3. In a pan heat oil, splutter the mustard seeds, and curry leaves include the paste and mix well let it cook for 30 seconds.
4. Add in the pressure cooked meat with broth and mix well add salt and corriander mint leaves mix well and cover let it cook in simmer for 3-4 minutes. Switch off add the pepper powder.
5. Taste and check for spices and salt. keep covered for flavours to develop.
6. Serve warm as a soup or with rice.
COOKS WISDOM
TIP 1
1. I love the meat to be nice and tender hence I pressure cook it for 10 whistles or for 15 minutes you can adjust according to your preference.

2. I love mutton pieces with bones for this soup, you can follow the same recipe to make chicken soup.
TIP 3
3. You can add a pinch of garam masala if you like its flavour. For a cheats version use pepper chicken masala for this soup.
