Summer is at its peak and so are mangoes, everywhere I turn around I see a mango stall and my grocery basket definitely has few raw and sweet mangoes. My love for raw mangoes have only increased so much so that I crave for pure raw mangoes rather than the sweet ones. As always I wanted to try new recipes with mangoes so that I can blog about them. This sweet and tangy manga pachadi is not new to me. Its been made over and over again during the summer season at my paternal home. Today I wanted to share this simple recipe to all my readers so that you can make use of this season's best and serve yummy recipes to your family and friends. Just one last thing, this manga pachadi is too addictive and the aroma of raw mangoes cooking is a pure joy to the soul. You can adjust the sweetness and spiciness as per your taste but nevertheless this is one recipe that is a must try if you love raw mangoes. Now lets move on to the recipe.

RAW MANGO PACHADI RECIPE

Serves - 5 to 6 people
Prep time - 5 mins
Cook time - 10 mins

Ingredients


Raw mango - 2 large, peeled and chopped roughly (get the green variety of mangoes)

Jaggery - 1.4 cup, grated
Water - 1/2 cup to make jaggery syrup
Salt- to taste
Oil - 2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 1 spring (6-8 leaves)
Red chilli powder - 1/2 tsp
Turmeric powder - 1/3 tsp

Method


1. In a wide pan add oil splutter the mustard seeds, curry leaves and add in the cut mangoes, cook in medium flame for 2-3 minutes.

2. Add 1/2 cup water turmeric powder, salt and cook covered for 5-6 minutes until the mangoes are 80% cooked.
3. Make jeggery syrup with 1/2 cup water and 1/4 cup jaggery, cook in medium flame for 2 minutes until all the jaggery is well dissolved. Strain and set aside
4. Now add the jaggery syrup to the cooked mangoes, cook further for 3 minutes adding the red chilli powder. 
5. Check for salt, spice and sweetness.
6. Switch off, you can let it come to room temperature and then store in an air tight container for upto a week. 

Serve along with dosa, rice, chappati or poori.

Tip 1


1. Don't be in a hurry to make this pachadi, slow cooking and patience is the key.

2. For variations you can add tamarind pulp/ grated coconut.

3. You can add more spice to this pachadi, i made it mild where the sweetness is more dominating.
