Love means different things to different people, each person differs in their expression of love. Today being Valentine's day everyone talks about love. But to me I came to know the true meaning of it through the Bible. It reads as this

"Love is patient, love is kind.

What better way to express in words what love can be? One other quote that made perfect sense it 
" Love is a verb if not just a word" which is so true. This little jar cake is just my expression of love for my other half. Love you sweetheart. Happy Valentine's Day!

Oranges are in full bloom this season. Every week I never fail to bring back home a dozen oranges and enjoy them daily. Every time I think of cooking/ baking with oranges and it never happens. The fruit craze that I am end up eating oranges instead. This time I saved up 2 oranges just to make this cake since I had bookmarked it for long. This recipe of Orange cake calls for no butter no eggs and no milk. Its a Vegan orange cake recipe that is so moist yet delicious with every bite. And you do not need an electric whisk/ have to keep the butter in room temperature none of it. Just a simple one bowl orange cake recipe. Isn't it too simple? I love snack cakes such as this. Now lets move on to the recipe.

Christmas is coming up and as always I have this huge list of things that I want to do. And for sure the baker in me is super excited to bake a cake. I had bookmarked so many recipes and thought of trying one by one so that I can blog about it in a hope that they turn out great. And my recent success was baking this super moist Christmas Fruit Cake that is eggless too. Doesn't that sound great? ok you might ask why does this cake not have a deep colour the reason is its not a traditional version and a quicke for which all you need is a wooden spoon or a wire whisk to whip up the batter. Doesn't that sound so simple? I used only tutti fruit you can go ahead and use any kind of nuts, dry fruits and dates to make a rich cake. I love such cakes (snack cakes) for their simplicity and yet you are can be sure that it tastes amazing.  Did I tell you that you can have this cake warm when its right from the oven? well it is :-) if you are an impatient person like me then you sure are going to try this one ;-) Don't wait any further get the bowls and start you baking

You must be knowing by now that I am a band wagon for simple snack cakes, I love to try and experiment with snack cakes. To be honest I had this bad experience with apple in a cake, I must admit that the last time I made an apple upside down cake it was a disaster since I used a spring form pan and the apple juices got spread in the oven. Silly me did not realise this or rather plan this before doing the recipe. That said I seriously loved the mild flavors of apple & cinnamon in this cake that is so well hugged by a soft spongy cake. Impatient me jumped to cut the cake and had the cake falling apart, but I managed to cut few decent slices and here we go ;-) so don't be in a hurry like me. If you are someone who does not like the Fruit/ Plum cakes for Christmas then you can give a go to this simple yet delicious cake, it tastes great the next day.

Cinnamon & Almond Loaf Cake | Snack Cake Recipe


I tried this loaf, after a long wait to get a loaf tin, it turned out super yummy and moist. I learnt that  Soured Cream keeps the sponge so moist. This loaf looks great when sliced. and if you prefer, you can substitute almonds with mixed fruits or nuts or your choice

If you are someone who loves cinnamon ~ cinnamon buns or cinnamon rolls you'd definitely love this one for sure. Its a great tea time snack with green tea/ chai :-)
Prep & cook time ~ 1hr 20 mins
Serves ~ 8-10

Ingredients

190 g unsalted butter, softened, if needed extra for greasing (I used parchment paper)
190 g plain flour, if needed extra for dusting
190 g caster sugar
3 eggs
1 tsp baking powder
1/4 tsp salt
25 ml soured cream
1 tsp vanilla essence
1 tbsp ground cinnamon
70 g almonds

Method 
  • Pre-heat oven 170C/ 325 F, Gas mark 3, then grease the loaf with butter and dust with flour or simple cut out parchment paper to line the inside of the loaf tin
  • Using a hand-held electric whisk cream together the butter and sugar until pale and fluffy. Break the eggs one at a time, mixing well after each addition and scraping down the sides of the bowl to make sure all the ingredients are fully incorporated
  • Sift together the flour, baking powder and salt, then add to the batter in two batches and mix on a low speed until just incorporated. Finally, mix in the soured cream and vanilla essence
  • Spoon about 200g of the batter into a small bowl an stir in the cinnamon. Srir the almonds/ raisins into the remaining batter, then por this batter into the prepared loaf tin. Spoon the cinnamon batter on top and swirl the two together for a marbled effect.
  • Bake the loaf in the oven for 50-60 mins or until the sponge feels firm on top and a skewer inserted into the center of the loaf comes out clean of any uncooked batter. Allow the loaf to cool a little before turning it out of the tin on to a wire rack to cool completely before you serve.
