BUTTERMILK FRUIT CAKE RECIPE

Bake time - 50 mins
Makes - 6 inch cake
Serves - 6
Ingredients
1 1/2 cups (200 grams) all purpose flour
2/3 cup (130 grams) granulated white sugar
1/4 teaspoon salt
1 teaspoon freshly grated nutmeg
1 teaspoon ground cinnamon
1 teaspoon baking soda
1 cup (240 ml) buttermilk
1/2 cup (113 grams) unsalted butter, melted
1/2 teaspoon pure vanilla extract
1/2 teaspoon rum extract (optional)
1/2 cup tutti fruitti / raisins/ dates
Method
- Preheat oven to 325 F / 165 C and take 2 mixing bowls. Grease a 6 inch cake pan and set aside. Add some flour to the tutti fruti and set aside
- In the first bowl add the dry ingredients - flour, baking soda, salt, spices, sugar (powdered) mix well and set aside
- In another bowl add melted butter, buttermilk, vanilla extract, rum extract mix well and set aside.
- Now slowly add 1 cup of flour to the wet ingredients and mix well, follow the same until all the flour is used up. Now add the tutti fruiti and mix well.
- Pour immediately to the greased cake tin and bake in centre of over for 45-50 mins you can check the cake after 40 mins by inserting a toothpick and it must come clean else bake for 5-7 more mins
- Once done remove the cake tin from the oven and let it sit on a cooling rack for 10 mins, now invert the cake and remove it from the pan.
You can slice the cake when it is warm and enjoy or store in an air tight container once it comes back to room temperature

- I added only tutti fruiti to this cake, you can go ahead and add chopped dates, raisins and nuts for more rich flavour
- You can adjust the spices in this cake or make it plain too
- I added 1 tsp of rum extract for a lovely punch
- To make buttermilk at home add 1 tbsp of lime/lemon juice to 1 cup milk, set aside after 2-3 minutes you will notice the milk curdling, you can later use this for making cakes
