Eggless Coconut Cookies is a perfect tea time snack, I love dunking these delicious cookies with my black tea. Last week I was in a mood to bake and I had the last stick of butter so the first thing that came to my mind was to make these delicious coconut cookies. I have made these cookies countless number of times. My friends and neighbors would know that :-) I usually make these cookies to take along to meet them. There has been lot of requests for this recipe so I had to blog about it. If you love nan khatai and coconut cookies from Indian bakery then you would love this one. Such an easy recipe to make, in fact you can make them crunchy or soft depending your liking, for me I love them mid way. Either way these cookies are sure to win anyone's heart.

EGGLESS COCONUT COOKIES | EASY EGGLESS BAKING RECIPES
Eggless Coconut Cookies is a beautiful light tea time cookies
loaded with the flavor of coconut. You can make it soft and
chewy or crunchy just by adjusting the baking time.
Nevertheless these cookies are sure to win everyone's
tastebuds.

Makes - 1 dozen medium to large cookies
Ingredients
Maida / Plain flour (unbleached) - 1 cup
Desiccated coconut (unsweetened) - 1 cup
Unsalted Butter - 1/2 cup (soft,in room temperature)
Sugar - 1/2 cup powdered
Baking powder - 1/4 tsp
Baking soda - 1/4 tsp
Vanilla extract - 2 tsp
Maida / Plain flour (unbleached) - 1 cup
Desiccated coconut (unsweetened) - 1 cup
Unsalted Butter - 1/2 cup (soft,in room temperature)
Sugar - 1/2 cup powdered
Baking powder - 1/4 tsp
Baking soda - 1/4 tsp
Vanilla extract - 2 tsp
Method
- Grind the powdered sugar transfer to a bowl. Grind the desiccated coconut and set aside. Pre-heat oven to 300 F/ 160 C and line a baking tray with parchment or cookie sheet.
- In the bowl with powdered sugar add the softened butter and mix until combined add in the vanilla and mix again. To this add the sieved baking powder, baking soda and the plain flour along with 3/4 of the ground desiccated coconut. Mix until combined and the dough will be crumbly.
- Now start rolling into small 1 tbsp balls and roll over the leftover desiccated coconut and set of the prepared tray.
- Place the dough balls 1 inch apart leaving space for them to spread.
- Bake in center of the pre-heated oven for 12-15 minutes for a soft cookie or for 15-18 minutes for a crunchy cookie.
- Once done remove from the oven and set on a cooling rack along with the tray to cool down.
- Serve with a warm cuppa and store the remaining cooled cookies in an air-tight container and store in room temperature.
