Eggless Coconut Cookies is a perfect tea time snack, I love dunking these delicious cookies with my black tea. Last week I was in a mood to bake and I had the last stick of butter so the first thing that came to my mind was to make these delicious coconut cookies. I have made these cookies countless number of times. My friends and neighbors would know that :-) I usually make these cookies to take along to meet them. There has been lot of requests for this recipe so I had to blog about it. If you love nan khatai and coconut cookies from Indian bakery then you would love this one. Such an easy recipe to make, in fact you can make them crunchy or soft depending your liking, for me I love them mid way. Either way these cookies are sure to win anyone's heart.

Its the best time of the year - Christmas and hardly few days more and I have been counting fingers    :-) with our relocation and the time of the year I mean I am all excited for whats ahead. So thankful for this phase in my life where I can sit and think about how far we have come. This happy place seems to be so energizing in a way. Can't than God enough for everything, counting my blessings make me realize how much I am fortunate and how much I am blessed beyond understanding. Thanking God for He is my anchor and my friend. But that said I have been running recipes in my mind to cook for Christmas and baking sure takes all the attention. I have always loved Candycanes and most recipes for candycane cookies call for eggs so I wanted to get my hands dirty to make a candycane cookie recipe that is eggfree. I saw many recipes online and on pinterest where the candycane cookies have a pink tint and I really wonder why. Follow the recipe to the dot and let me know how it turned out.

Don't we all love a break from a busy day? and with a cup of coffee the break does seem worth it all doesn't it? Why not have a break with a coffee cookie? sounds perfect right. These yum crunchy cookies with a lovely coffee chocolate flavour in every bite is sure a great way to treat yourself. I used Kelloggs honey & almond to roll the cookie dough and they turned so crunch that I couldn't stop myself from having two instantly. Make these for kids/ adults and they will enjoy it. You can skip coffee powder in case you are not a coffee lover and enjoy. I find cookies are so easy to make compared to cakes which involves a few extra process. Nevertheless I do enjoy every bit of baking and the best bit is watching your loved ones enjoy what they eat :-)


Chocolate Cornflakes Cookies is a no-egg recipe and is simple to do, if you are a beginner in baking this are perfect to learn and have a success at baking. The texture of the cookies is crunchy on the outside and soft inside. Every bite gives the lovely flavour of coffee and chocolate which instantly can excite you. Now lets move on to the recipe.

Christmas means many things to many but for me the whole reason and season for Christmas in Jesus himself. Although I was born in a Christian home and had all the access to anything gospel, my knowledge and acceptance of Jesus as my Lord is something I consider personal choice. You know what I mean no one forced me into anything. Each of us have our own faith and we learn as we grow. I am a strong believer of God and that inevitably shows. I do accept people for who they are and not for what they believe, you see faith is totally a sensitive topic to anybody. Today not like other days I just want to share with you something that touched me years ago when I was young and in a fragile state of mind. I was out in one of my uncle's place and I was sunk in my own thoughts as to why something that I expected never really happened. And I had a series of things that happened just exactly what I feared. Hmmm and that moment when I was trying to divert my mind and attention to almost anything or anyone I read this line in a book that caught my eye, it read like this " God does not give us what we want but what we need" I was blown away. Really it spoke so much to me that my whole perspective as to why and what and how turned to there could be a reason why this happened. Only someone who has a relationship with God really understand what those lines meant. And ever since I have this phrase reverberating in me when things don't turn out the way it should. May be that is something that you must also think about. Be blessed!

Eggless Chocolate Snowball Cookies were my recent attempt to try a twist to the traditional snowball cookies/ mexican wedding cakes that are famous during the Christmas season. Their unique shape, snow capped appearance and melt in mouth texture is sure to please anyone who has a sweet tooth. So if you are a chocolate lover or a chocoholic like me this is something you must definitely try a total fool proof recipe that is sure to steal anyone's heart. My non chocoholic husband seemed to love it too ;-)

Wow its just 8 days to Christmas and sure the Christmas Spirit is real high for me :-). This year like always I have a huge list of bakes and goodies that I plan to make and distribute for friends and family. I must say that nothing like home goodies ads gifts for this Christmas. I am sure many of you loved to receive gifts that are homemade. I made these spiced sugar cookies that have a lovely flavour that is similar to the flavours your get in a Christmas cake (Christmas Plum cake). Isn't this great? well an experiment in the kitchen turned success is what I would call this recipe. Although I see so many coloured cookies doing rounds over the internet I love recipes that are simple and easy to do which taste wonderful. I sure can say that this cookie is of this category.

Christmas and baking does ring bells to me ;-) I still remember a few years back when I did a Christmas Cake that tuned hard as stone ;-) of course it was way before my life as a blogger. The reason I brought this up is that if you are new to baking don't be worried disasters happen and we must learn our mistakes and keep trying until we get them right. If there is a baker that told me that not one of their bakes was a disaster I will sure have a good laugh. No one is a born expert we all learn, relearn, explore and create. Baking of course is science in pure sense but if you have a good recipe then you sure are going to have a good result. Well enough with the rambling and yes this is one fail proof recipe that may be you should give a try. I am sure it will turn out just perfect.

Sugar cookies or old fashioned sugar cookies are sure in a baker's list to bake for Christmas. They are pure easy and can be packed in goodie bags and distributed in parties. They are firm on the outside with a sift inside and not too firm like our Indian variety of biscuits. Sugar cookies have a buttery flavour along with a dash of vanilla. 

Kesar Nan Khatai Cookies | Flavored Nan Khatai Biscuit



I love Indian bakery goodies, and of all the different bakes my most favourite is Nan Khatai and since its festival season I thought why not doing a twist with the traditional Nan Khatai by making it a Saffron flavoured. Nan Khatai are buttery melt in the mouth cookies and have a crumbly texture. The cookies are great as a snack and can be wrapped as a treat for guests or kids. Saffron Nan Khatai are firm on the outside with a slight mithai flavour on the inside. The topped nuts add to the crunch and taste. These colourful Saffron Nan Khatai are sure a joy to taste and attractive looking. Give this a dry during the festive time. 

Special K Cookies ~ A healthy snack

Bored with your cereal and want something different for a breakfast snack? try these Healthy Special K cookies with a hint of coconut and some chewy raisins.  You don't have to be an expert to bake them, so try your hand at it even if you are totally new to baking. I chose to bake the cornflakes cookies, recipe picked by Priya and I modified it a bit to make it healthy and they were so yummy. Recipe Source ~ slightly modified Baking: Commonsense by Murdoch  Books 
Makes ~ 12- 15 small-medium sized cookies

Ingredients

65grams Softened unsalted butter
1/4cup Sugar (i used light brown sugar)
1 Egg (lightly beaten)
1/2 teaspoon Vanilla extract
2 tablespoons Black raisins (choice of nuts/raisins)
1/4 cup Dessicated coconut 
1/4 teaspoon Baking soda
1/4 teaspoon Baking Powder
1 Cup flour- plain/ wheat (I used wheat flour/atta)
1 Cup Crushed Cornflakes (I used Special K)

Method
  • Preheat the oven to 180C/350F, line two baking trays with parchment/ grease-proof paper. Take 23 bowls in the first one sieve the flour with baking soda and baking powder, the second one crush the cornflakes and set aside.
  • In the third large bowl cream the butter and sugar using electric beater/ free stand beater until they turns light and fluffy. Add the egg, beating thoroughly and add the vanilla and beat until combined. Scrape through the sides of bowl to combine the entire mixture.
  • Combine the raisins, dessicated coconut and mix well with a wooden spoon. Fold the flour mixture with a metal/ wooden spoon and stir until the mixture is almost smooth.
  • Use your measuring tsp and grease it (make sure to grease hands), take a tsp size dough and roll it into a small ball and gently dab all the sides with the cornflakes mixture. Be gentle and don't press it too much and place it in the lined baking tray and slightly tap on top for it to sit well. Continue the same until you have made balls out of the entire dough, make sure that you space them atleast 1.5 inch space as they will spread during baking.
  • Bake in a pre-heated oven for 12-15 minutes until they turn golden brown. If you want your cookies to be crunchy bake for another 8 minutes.
  • Once baked cool completely in a cooking rack and arrange it in an air tightened box.
Tips 

- make sure you use butter at room temperature and sieve the flour to combine all dry ingredients
- taste the mixture to check for sugar level
- you can use your preferred flour (plain/wheat), i wanted it to be healthy so used wheat and brown sugar
- If you want your cookies to be crunchy bake for another 8 minutes
- the reason i have used a measuring spoon to take the dough is to get even sized cookies but if you can eye ball the quantity just skip that

Lovely Nan Khatai ~ Cardamom flavored Indian Biscuits

Nan Khatai, a lovely Indian biscuit that brings back childhood memories :-), I remember asking my mum to buy them every time we used to make a visit to the bakery. These goodies are soft and have a melt-in-mouth texture, smell heavenly, also have a good punch of the Indian spice Cardamom which is used in most Indian desserts and cooking. Oatmeal Cookies | Oats Cookies | Easy Snack Box Cookies


After my attempts to make the Coconut Macrons, I was on the look out for a perfect cookie recipe with oatmeal, and at last I found one! This book is too good and if you are a passionate baker you must try their recipes. So far I have baked 2 of their recipes and it just turned out great. One was the Almond Cinnamon Loaf and the other is this recipe which I will be sharing with you. 
These oatmeal cookies were made with old-fashioned rolled oats and not the instant one. It has the perfect crunch and if you want your cookies to be soft remember to take them a little earlier from the oven. In both recipes I have modified it with my favorite nuts. My suggestions would be to try out nuts or chocolate chips with will go well for these cookies. I love to pair them with a hot tea/green tea, if you are not a tea person simply dung it with milk and enjoy. 



OATMEAL COOKIES RECIPE

Prep & Cook time ~ 30 mins
Serves ~ 15 cookies (medium sized)

Ingredients

135 g unsalted butter, softened
80 g caster sugar
80 g souft light brown sugar
1 large egg
1/2 tsp vanilla essence
190 g plain flour
1/2 tsp tsp salt
1/4 tsp ground cinnamon
1/2 tsp bicarbonate of soda
60 g rolled oats
handful of almond flakes to decorate

Method
  • Pre-heat the oven to 170C/ 325F, Gas mark 3 and line 2 baking sheets with baking parchment
  • Using a electric mixer cream together the butter and both types of sugar. Add the egg and vanilla essence and mix on a medium speed. 
  • Sift together the flour, salt, cinnamon and bicarbonate of soda, then add the dry ingredients one half at a time and make it into a dough (remember the dough can be little sticky & wet) make sure that its isn't too wet, in case it is add little flour to balance
  • Make small even size balls out of the cookie dough just like how you do roti and roll it between your palms and flatten it on the prepared baking sheets. If preferred stick nuts on top
  • Allow 5-6 cookies per sheet, making sure to space them apart by 7-8 cms they will spread during cooking
  • Place in the oven and bake for 15-20 mins or until the cookies are a light golden brown.
  • Leave on the sheets for about 10 minutes to cool and set, and then remove to a wire rack.
Tips 

- If you prefer softer cookies, remove from the oven as soon as they start to become golden
- You can replace nuts to chocolate chips
