One big blessing from the virtual world to me is good friends and I am so happy to share today's recipe for one of my good friend Vineetha Susheeb (Vinee) who blogs at Ruchi aka Malabar Ruchi. Her blog is a bakers heaven, she has lots of traditional recipes from Kerala and other Indian recipes too. We got acquainted few months ago through facebook and also we also got to meet at Bloggers Buzz, a food bloggers meet in London. Vinee is such a down to earth person and I can tell you she is very friendly, she has been blogging on and off for nearly 5 yrs now but when you talk to her she will be so humble and listen to you like a newbie blogger. I am so happy to meet and get to talk to her frequently. I
When Vinee asked me to do a guest post I immediately jumped to the idea, but the next minute my mind was fully worked up as to what recipe to do. Its so hard to think a recipe for a fantastic cook and after much delay I came up with few recipes to her and she picked 'Pinwheel Cookies'. These cookies are my absolute favorite and I had tried them earlier over the Christmas season but due to bad weather and lighting I could not click pictures at that time. Although it does take a little patience and practice I was confident that will take extra care to do them right the second time. I had a deadline to do the cookies since I was planning to give them to a sweet angel Olivia for who I did the Chocolate cake which I had posted earlier. So I was baking a cake and these cookies on the same day. Don't he in a hurry like me and take time to do them since the cookie dough needs to be freezed for atleast 6 hrs or overnight for it to hold its shape. Pinwheel cookies as I call it has different names like Icebox cookie, Spiral Cookie, Swirl cookie, Choco Vanilla cookie and Christmas cookie. Its a Christmas tradition to do pinwheel cookies and they are very commonly made with chocolate and vanilla dough rolled together, but there are also variations in recipe like adding dates filling instead of chocolate, making them in contrasting colors of red and green or red/green with white, or even rolling the dough on sugar sprinkles and freezing them. So there are lots of choices on how you want to do it. But I love the classic way of doing them so I stuck to basics.
