Are you a fan of Bounty Chocolate???? I am :-)... I love the flavor of sweet coconut and luscious chocolate, hmmm yummm!!! I always wanted to try something similar in my bakes but I have not found the
Choco Coconut Pancakes/ Bounty Pancakes as I call it is super soft, airy and without eggs and butter, yes you read it right, it is totally egg-free and butter-free. Surely a guilt free indulgence for the morning / brunch munch.

Makes ~ 6 medium sized pancakes
Cook & Prep time ~ 10 mins
Ingredients
Self- rising flour 1/2 cup
Cocoa powder - 1 tbsp
Dessicated coconut - 2 tbsp (depending how rich you want them to be)
Custard powder - 2 tbsp
Baking powder - 1 tsp
Brown sugar - 2 tbsp
Salt - a pinch
Milk - 1/2 cup or more
Vanilla extract - 1/2 tsp
Coconut essence - 1 tsp
Nutella - to serve (optional)
Method
- Mix all dry ingredients in a bowl - flour, cocoa powder, custard powder, dessicated coconut, sugar, salt, baking powder, mix well to combine
- In milk pour the vanilla and coconut essence mix well, make a well in the dry ingredients and pour in the center and combine well. The consistency should not to too thick/ too thin, add more milk if required. Give it a taste to check for sugar
- In a medium hot skillet pour the batter, and you will see bubbles forming on top after 25 secs flip side and cook for another 25 secs.
Serve topped with nutella and some dessicated coconut
Cooks Wisdom
- Never heat the skillet on high, the pancakes tend to darken and taste bitter, so make sure its not too hot
- Add more / less cocoa powder depending on how rich your cocoa powder is. I used green and black cocoa powder and birds custard powder
- You can also add choco chips to this batter for more chocolaty taste
- In case you don't have coconut essence try to add 1-2 drops of coconut oil not more
