I love all things chocolate and do I really need a reason to love chocolate??? certainly not. Over the weekend we had a birthday party to attend and it was for a cute little princess Olivia who turned two. I wanted to bake her something so that she can have it later so planned to do some cookies and a cake. Like always I was confused as to what to bake and all the recipes I had picked somehow I felt she may not like it. So my safest bet was chocolate, tell me who does not lov will not love chocolate? well it was a pure guess. And to my surprise she actually loved the cake and she is a chocoholic just like me:-)
The cake was eggless and hence you don't need a beater to cream butter. Its really simple to put together and in a matter of 1 hour you can finish the cake and the ganache (dark chocolate & cream). It is the most simplest of recipes that I found and it came really handy to do. I was in such a hurry to click pics and hence I could not take decent ones.
My love for chocolate and baking did make me explore many cocoa powders in the market and after the Hersheys cocoa powder my recent and favorite find is the Green & Black cocoa powder which you see in the pic below. Its a great value and gives a rich chocolate bake that remains dark (that's how I love my chocolate cakes to be)
CHOCOLATE CAKE RECIPE {Eggless}
Prep & Bake time ~ 45 mins
Recipe Source ~ Joy of Baking
Makes ~ 6 inch cake
Serves ~ 4 generously
Ingredients
1 1/2 cups (195 grams) all purpose flour
1 cup (200 grams) granulated white sugar
1/4 cup (25 grams) unsweetened cocoa powder
1 teaspoon baking powder
3/4 teaspoon baking soda
1/4 teaspoon salt
1/3 cup (75 grams) unsalted butter, melted
1 cup (240 ml) warm water
1 tablespoon lemon juice(or vinegar)
1 teaspoon pure vanilla extract
Method
- Preheat oven to 350 degrees F (177 degrees C).
- In a greased 6 inch pan, stir together the dry ingredients - flour, sugar, sifted cocoa powder, baking powder, baking soda, and salt.
- Add the melted butter, water, lemon juice, and vanilla extract. With a fork, mix all the ingredients together until well combined and there is no lumps
- Bake in preheated oven for about 35 minutes, or until the cake springs back when lightly pressed and a toothpick inserted in the center of the cake comes out clean.
- Remove from oven and place on a wire rack to cool.
DARK CHOCOLATE GANACHE
Ingredients
1 cup (170 grams) semi-sweet dark chocolate, chopped
3/4 cup (180 ml) heavy cream(35% butterfat)
1 tablespoon unsalted butter, room temperature
Method
- Bring a saucepan of simmering water to boil and in a bowl add the ingredients, place it on the saucepan and mix well
- Once melted let it thicken a little, take it from the saucepan and let it cool down
- Once cooled down pour it on the cooled cake and let it settle down
- Chill it in fridge for few minutes to set, cut and serve
