Podalangai / Snack gourd is one of my favourite veggie. I usually use this up in sambar, poriyal or kootu. Snack gourd like most vegetables has many health benefits its full of fibre, aids weight loss and it is said that juice of it when used in scalp can treat alopecia. They are natures way of cooling the body hence make use of this vegetable to the best during scorching summers. Today I wanted to share a simple stir fry/ poriyal using podalangai/ snack gourd.

PODALANGAI PORIYAL | SNACK GOURD STIR FRY RECIPE

Recipe - Own
Serves - 3-4 generously
Prep time - 5 mins
Cook time - 7 mins
Serving suggestion - with rice and curry.

Ingredients

Podalangai/ snack gourd - 2 medium sized 
Oil - 2 tsp
Mustard seeds - 1/2 tsp
Curry leaves - 3-4 nos
Dry red chilli - 1 no
Urad dal - 1/4 tsp 
Channa dal - 1/4 tsp
Chopped onions - 1 tbsp
Jeera/ cumin powder - 1/4 tsp

Method

1. Wash the podalangai and peel the skin, later cut it vertically and scoop out the white fibre contents, discard them. Now chop the veggie into small pieces.
2. In a pan add oil, once it heats up, splutter the mustard seeds, urad dal, channa dal, curry leaves, red chilli and onions. Saute for 2 minutes.
3. Add the podalangai pieces and salt saute for 30 seconds add water and cover with a lid cook for 6 minutes. Until the pieces are well cooked.
4. Now add in the jeera/ cumin powder mix well cook for 30 seconds and switch off.

Serve along with your rice and curry.
