We all know that greens are great, Spinach are great and have important nutrients, such as folate, vitamin E and lutein, to keep your body strong. I make it quite often in different forms but my favorite of them all is this simple stir fry that is absolutely yum with shallots, spinach and garlic. Perfect to go with any curry and rice.
Cook & Prep time ~ 10 mins
Serves ~ 2-3 generously
Ingredients
Spinach/ palak - 2 cups, washed
Shallot - 5, sliced
Garlic pods - 3-4 small pods
Mustard seeds - 1/4 tsp
Urad dal - 1/4 tsp
Whole Jeera/ cumin - 1/4 tsp
Curry leaf - 3-4 leaves
Turmeric powder- a pinch
Red Chilli powder - 1/4 tsp
Jeera powder - a pinch
Salt - to taste
Oil - 1 tsp
Method
Wash spinach leaves, discarding the stem, set aside. In a non-stick pan heat oil, add mustard seeds wait for them to splutter, then add urad dal, curry leaf, jeera, garlic pods and saute for 1 minute. Now add the shallots and saute for 2 minutes until they are transparent Now add the spinach leaves, give it a good mix add the turmeric, red chilli powder, jeera powder and saute well. Cover and let it cook for 2-3 minutes. Once the leaves wilt add salt and check for taste.
Serve along with rice and curry
- Adding shallots and garlic give lots of flavor to this stir fry so make sure you don't miss adding them.
- Add red chilli powder as per spice tolerance.
