Red Snapper Fish Fry | Sankara Meen Varuval | South Indian Fish Fry recipe


Its been a while since I posted a recipe up in this base. I was drained with few personal priorities that kept me away from blogging but I am so glad to get back on tract. Will be back to posting recipes often and thanks to all my friends, followers, readers and bloggers who kept checking with me regarding my absence :-) truly blessed to have such wonderful people who care about me and of course this yummy blog ;-). Its officially summer and I have been trying ways to keep my body cool, I will be sharing more summer recipes, so stay tuned. 

I am back with my favourite recipe and you can say that this fish fry has been with us since childhood and I used to love this pink fish (nick named by moi) originally called Red snapper/ sankara meen. Its one of the easiest and widely available variety of fish and the cheapest of all fishes. They taste great and does have many bones but they are excellent when fried with a sweet tangy marinate. 

Nethili Fish Fry | Anchioves Fish Fry | Nethili Meen Varuval



Its been a while since I had fish and seeing these pictures makes me crave so badly for some fish fry. Talking about this, these pictures were clicked when I was home and Amma made Nethili Meen Varuval (Anchioves Fish Fry). Amma usually cleans these tiny fish and remove the bones and only fries the freshly part. Its easier to chew and eat them not having to worry about those tiny bones. But in my opinion if you find tiny version of Anchioves you need not remove the bones and directly marinate the fish and fry them. 

Many famous South Indian restaurants serve this Nethili Fish Fry in a bed of fried curry leaves. The fish are crisp since they are mostly deep fried. This version of Nethili Fish fry are not crisp for two reasons one they are more freshly and they are shallow fried. Make sure you get fresh fish to make this recipe, marinate overnight and fry them the next day. While serving, make sure it is nice and hot and drizzle some fresh lemon juice for an extra punch.

Vanjaram Meen Varuval | King Fish Fry Recipe | South Indian Fish Fry Recipe

I am a fish lover and the kind that is fried. Since childhood I always loved fired fish and the way Amma makes it, shallow fried. Along with curd rice I am a happy child :-) Only after growing up did I know that some do not pair non-veg with curd and I really felt that is something not fair. I have always grown to love curd and I cannot think of never adding curd to my diet. Fresh home-made curd is my top preference. Coming back to fish fry, South Indian homes and restaurants can never complete their menu without the popular Vanjaram Meen Varuval/ King Fish fry/ Masala Fish Fry. Of all fish fries the Vanjaram/ king fish fry is considered the best. The top secret in any fish fry is the spices and the combinations made to marinate along with the fish and shallow fried to perfection. The fish does not turn crisp but the shallow fry helps the fish to get cooked with a partially smoked masala to wrap them :-) truly this fish fry is magic.

Fish Fry | South Indian Fish Fry Recipe | Small Fish Fry Recipe


Any South Indian non vegeterain recipe is never complete without a masala fish fry. I am always a fan of fish in any form or kind, but I always find the small fish variety are more tastier and crisp when it comes to fish fry. My favorite combination is sambar/ rasam/ curd rice with fish fry. Most of our weekends never fail without this fish fry recipe. Happy Weekend y'all :-)
