Cabbage Rice Recipe | Variety Rice Recipe | Lunch box recipes


If there is one vegetable that is made frequently in our household it is cabbage. I must admit that chopping them fine is a challenge but I take the short route to shredded them with a bigger holed shredder. Usually cabbage is known to be cooked as poriyal or kootu or with dal but today my dear Amma came up with a mixed rice recipe. Its surely a unique recipe and tasted great for those days when we want to go purely vegan. I love to have this mixed rice along with fryums/ potato chips and potato masala and may be some curd too. 


CABBAGE MASALA RICE RECIPE

Recipe Source - Amma
Serves - 3-4 generously
Cook & Prep time - 20 mins
Serving suggestion - Along with fryums or potato chips

Ingredients

Chopped / shredded cabbage - 2 cups
Green peas - 1/2 cup
Shredded carrot - 1/2 cup
Cooked rice - 2 cups
Onions - 2 sliced
Green chili - 3 slit
Ginger - 1/2 inch chopped fine
Garlic - 3 pods chopped fine
Turmeric powder - 1/2 tsp
Sambar powder - 1 tbsp
Lime juice - 2 tbsp
Salt - to taste

To Tempter

Oil - 2 tbsp
Mustard seeds - 1 tsp
Jeera/ cumin - 1 tsp
Urad dal - 2 tsp
Channa dal - 2 tsp
Curry leaves - 1 spring

To Garnish 

Corriander leaves - few chopped
Roasted groundnuts - handful

Method

  • Heat oil in a wide pan. Do the seasoning in the order given.
  • Add onions, green chilies  ginger and garlic, mix well and saute for about 5 minutes till the onions are turned to golden brown.
  • Add the cabbage, mix well for about 5 mts. Sprinkle a little water on cabbage, cover with lid and cook for 2-3 mts on medium flame.
  • Now add the greeen peas, turmeric power, sambar powder and salt. Stir well. After  2 minutes remove from fire.
  • When it is cooled add the rice, mix gently. Now add the lime juice and check for salt and spice.
  • Garnish with roasted peanuts and coriander leaves
Cooks Wisdom

- For additional flavor you can add mint leaves to the cabbage masala
- Make sure the vegetables are well cooked before adding the cooked rice
- You can add scrambled egg to garnish

  7. Hey... i make this too! :) Isnt it lovely? And its funny cos I actually prefer to cook with cabbage for the main reason it being easy to chop... rough messy chops and the veggie still looks pretty :D
