Karahi Paneer Recipe | Restaurant style Kadai Paneer | Paneer Side Dish


Being born in a family of non-veg lovers, vegetarian dishes are not much of a fancy to us. But for me there is one exception, I love Paneer and make sure there is a paneer recipe in the menu every fortnight  Although the fight between chicken, fish and paneer happens at home, I still do things my way :P. RK never used to even like the thought of Paneer but since I used to make it he ended up loving it. Now thats what I call as a lovely husband.



Karahi Paneer/ Kadai Paneer is a lovely flavor-packed and simple paneer recipe that is great with roti's or just any kind of bread. If you are a tofu lover you can just add tofu to this recipe. Of course you can do your own paneer at home if have all the time for it. Karahi is a thick circular round pot similar to a chinese wok/ indian kadai. The whole idea of cooking in a Karahi is for simmering to get the maximum burst of flavor. If you have used a kadai/ wok before you are sure to know what I am talking about. 

KADAI PANEER RECIPE 

Recipe Source ~ I ♥ Curry (slightly modified)
Cook & Prep time ~ 20 mins
Serves ~ 4-6 people

Ingredients


6 tbsp veg oil

1and 1/2 tsp cumin seeds
3 inch fresh root ginger, skin peeled and chopped
2 fat garlic cloves, chopped
1 small onion, chopped
3-5 green chillies, whole, slit in the middle
3 small tomatoes, chopped
1/3 tsp turmeric powder
3 tsp ground coriander
3/4 tsp ground cumin
1 tsp garam masala
300 gms paneer, chopped into 2.5 cm dice
1/2 each green,red and yellow pepper chopped into 2.5 cm dice
Salt- to taste
Milk/cream - 1 tbsp

Method



  • Chop the onion, capsicum/peppers, paneer and set aside. In a mixie/blender puree the tomato with all the spices, ginger, garlic and salt with a little water to help and keep ready
  • Heat oil in a large karahi/kadai/non-stick pan, add cumin seeds wait for them to brown and release aroma, this would take around 6 minutes. Add the puree and let it cook in medium to high flame until it thickens. You will find the masal releasing oil and further brown them by stirring constantly. 
  • Add the peppers and paneer with a good sprinkle of water and mix carefully without breaking the paneer. Now add the milk/cream, check for spice and salt. Cover the lid and let it cook for 4 minutes
Serve hot with roti/ bread
