Ellu Mittai Recipe | Til Chikki Recipe

Sesame candy/ Ellu Mittai is my favorite Chikki snack. Reminds me of the famous Rajaram Chikki bars which I used to relish as a child and even now. These are so simple and easy to make and have the perfect crunch and not chewy whatsoever. With less ingredients and quick to do who would not love it? When I first saw this recipe I simply ran to my pantry to check for the ingredients and in no time made it. You can double the quantity and cut them as bars. To me these are the Indian way of energy bars, try them and you are sure to love it.
Recipe Source ~ Originally Spoonful, adapted from Ramya
Prep & cook time ~ 10 mins
Makes ~ 15 small squares

Ingredients

1/2 cup white sesame/ til seeds

1 and 1/2 tsp honey
1 and 1/2 tsp brown sugar
1/4 tsp elaichi/ cardamom powder
Generous pinch of ground ginger/ chukku

Method

  • Take a rectangle parchment paper and grease it with few drops of oil and fold in two, set aside(or simply use two greased sheets)
  • In a non-stick pan in medium flame, dry roast the sesame seeds until puffy and fragrant for 5 mins, transfer this to a bowl and set aside
  • In the same pan in medium flame add the honey, brown sugar and spices, mix well and let it boil. After like 2-3 minutes you will find bubbles and now add the sesame seeds to this and mix well and be quick.
  • Now transfer this to the parchment paper on one side of the greased paper and close it tight with the other end (or simply use two greased sheets), use a rolling pin and level it to 1-2 cms thickness.
  • With a grease knife cut into 1  inch squares and let it cool, takes about 2 minutes to cool completely
Enjoy the home-made chikkis with your favorite drink

Cook's Wisdom

- Make sure you do not touch the hot melted sugar, you are likely to get burned
- Use a wooden spoon to mix the ingredients
