Dates & Nuts Cake | Egg-free Butter-free Dates Cake | Super moist Dates Cake


We all have a love and hate relationship with food, likewise for me I love dates and the same time hate it, sounds funny right? well I love to have dates in hidden forms like cakes and smoothie but hate to have them as they are. We all know the goodness of dates and like most ambitious housewives' I picked a pack of dates that I never touched for quite a long time, thankfully dates do last a very long time if stored properly. I sure didn't have the heart to bin them and hence I was on the look out for a good recipe to put them to use. I was lucky to find an eggless and butterless version, something that is a sure hit to me. Trust me if you are someone who is never convinced on egg-free and butter-free cakes this is something you must try. I can guarantee that you would have never tasted a super moist cake as this.
I do go cake crazy at times and do get myself busy doing some baking and trust me its a key to keep your house warm during the winter, no I am not joking its better than boilers. About this cake its a sure moist and light cake that has depths of flavor as it ages, what I mean is that the cake tastes great the next day and I found it more tasty and in fact all the more moist, so make sure you reserve some for the next day. The nuts and raisins do add great flavor to the cake, you could also spice it up with nutmeg, cinnamon and even use your dried fruits and make it a Christmas cake and you will have lots of praises. Thanks to Sangee and Vimithaa for this wonderful recipe, we both loved it so so much.

Verdict ~ Husband loved it and said this is the best cake and named it eggless Christmas cake.




Prep time ~ 10 mins
Bake time ~ approx 40 mins
Makes ~ 8" cake, serves 8

Ingredients

Whole wheat flour - 1 and 1/4 cup
Plain flour/ maida - 1/4 cup
Baking Soda - 2 tsp
Baking powder - 1/4 tsp
Salt - 1/3 tsp
Dates - 20 no (I used brown seedless dates)
Milk - 1 and 1/2 cup (I used skimmed)
Sugar - 1/2 cup (I used demerara) 
Oil - 1/2 cup + 2 tbsp (I used sunflower)
Vanilla extract - 1/2 tsp
Chopped cashew & raisins - 1/2 cup

Method
  • In a microwave safe bowl heat milk for 1 minute and add the seedless dates to this and set aside. Once it comes to room temperature blend it in a food processor/ mixie and make it into a fine puree. You can even drain it and again add the pulp to make a fine puree
  • In another bowl sift together the wheat and plain flour along with salt, baking soda and baking powder
  • Pre-heat oven to 350 F/ 180 C and line a 8" pan/ loaf tin with parchment paper/ grease it, set aside.
  • Add vanilla extract, oil and sugar to the pureed mixture and mix well until well combined.
  • Slowly add the flour to the wet ingredients and combine well. Add the nuts and raisins and mix well. 
  • Fill the prepared tin and top with remaining nuts and bake in the center of oven for 35-40 mins until a toothpick inserted in center comes clean
  • Once done let the cake sit on the pan for 10 mins and then transfer it to a cooling rack to be cooled.
Cut and serve with a cup of coffee/ tea

Cooks Wisdom

- The cake is super moist and tastes great the next day, so do it ahead and wait to relish the cake
- The color of the cake totally depends on the color of the dates used
- You can make the cake entirely using plain flour
- Adding nuts and raisins in the cake makes it very interesting and the toasting of the nuts on top gives it additional flavor
- You can add your favorite nuts like hazel nuts, almonds, walnuts and so on
- If using black dates you need not soak them in warm milk instead just puree them with milk
- You can also used chopped dates to make this cake if you want more substance to the cake

    i wud try ur version again and see how it wud taste

    i have used till now plain flour or maida but mayb now i shud try mix of wheat flour too
