Lovely Nan Khatai ~ Cardamom flavored Indian Biscuits

Nan Khatai, a lovely Indian biscuit that brings back childhood memories :-), I remember asking my mum to buy them every time we used to make a visit to the bakery. These goodies are soft and have a melt-in-mouth texture, smell heavenly, also have a good punch of the Indian spice Cardamom which is used in most Indian desserts and cooking. I baked them based on a recipe from Shab's Cuisine, a truly fool-proof recipe from her mom and for sure I knew its going to turn out beautiful. What I really love about the recipe is that you are sure to have the ingredients in your pantry and also its quick and easy to make, a easy to bake recipe. Since these goodies are baked at home they are going to get over quickly so make sure you do enough biscuits.

Recipe Source ~ Shab's (modified a little)
Makes ~ 12 cookies (small-medium sized)
Cook & Prep time ~ 20 mins

Ingredients 

1/2 Cup granulated sugar (powder them)
1/2 Cup Ghee 
1 Cup all purpose flour
3-4 Cardamom/ Elaichi (powder them)

Method
  • Pre-heat oven to 180C/ 350 F and line a cookie try with baking sheet/ grease proof paper. Powder the sugar and elaichi separately
  • In a mixing bowl sieve the flour, powdered sugar and elaichi (optional), I put freshly powdered elaichi directly, if you don't want elaichi bits in the cookies sieve them
  • In a pan melt ghee, let it cool down to room temperature and mix it little by little to the dry ingredients, making it little wet to a dough consistency. Ifs fine if its little sticky and not a perfect dough
  • Roll small balls out of them and place them on the cookie sheet, slightly tap them on top, don't press them too much they might tend to crack while baking. Spread them evenly leaving space between the cookies (they won't spread)
  • Bake them for exactly 15 mins, don't need to let them turn brown. Once done place them in a cooling rack and let it cool for 10-12 mins and store them in air-tight jars
Tips

- You could add nuts to the mixture or decorate them on top, before baking them
- Sieve well if you don't want elaichi bits in the cookies
