If you are a pickle and mango lover you must try this. Trust me you will have this pickle almost everyday with every other meal but the best of combination is curd rice and pickle (thaiyur sadam and oourga). I am a curd lover, from a very young age I am used to having curd and since I am from south India, we are blessed with a lot of sun and for sure we need to cool ourselves and having curd was one way I used to beat the heat.
Cook & Prep time ~ 10 mins (*check tips below)
Ingredients
Green mango - 1 large/ 2 medium, washed sliced into small pieces
Mustard seeds - 1 tsp
Fenugreek seeds - 1/4 tsp
Red chilli powder - 1 1/2 - 2 tsp (based on spice tolerance), use paprika for less spice
Turmeric powder - 1/4 tsp
Hing/ asafoetida - 2 pinch
Oil (vegetable) - 1/4 cup
Method
- Dry roast the fenugreek seeds in a pan, medium flame until they turn light brown. Once they cool down make it into a powder in the mixie. Chop the mango into fine pieces and place them in a bowl (air tight to be refrigerated later), to that add the chilli powder, turmeric, fenugreek powder and salt
- In the same pan add oil once hot add the mustard seeds and let them pop, off the stove and add hing / asafoetida. Add the seasoned oil to the cut mango pieces. Give it a good stir in a dry spoon and check for salt and spice. Once this cools down close the air tight lid and refrigerate
Tips
- The flavors combine well when stored in the refrigerator but can be almost used once made. Takes almost 2 days for the pickle to release lovely flavors
- use paprika if you want to reduce/ replace the spice level
Serve with chill curd rice :-)
