Ragi / Fingermillet/ Kezhvaragu is something that I genuine enjoy cooking with. Unlike most healthy ingredients Ragi to me is very versatile and can be used in day to day cooking be it a healthy Ragi Malt or Ragi Chappati or a crumbly sweet Ragi Almond Cookie or even a laddu. I have tried various recipes using fingermillet and each time it never fails to turn out yum and delicious. One such trial was this Ragi Maavu Laddu, how many of you love maavu laddu? I totally am a crazy fan for this melt in the mouth laddu. While my household gaze at all the cashew sweets in the sweet stall my eyes would roll over to find these delicious melt in mouth laddu - Maavu Laddu. One thing that really attracts me to Maavu laddu is the fact that is melts in your mouth and another reason is you cannot have more than one at a time ;-) So the other day I was wanting to try a Ragi Laddu and come up with this total twist to Maavu Laddu. The result was so satisfying and my family simply loved this sweet so much, I think I have raved too much about this, now lets move on to the recipe.
RAGI MAAVU LADDU RECIPE
Recipe - Own
Makes - 8 medium sized laddu
Prep time - 10 mins
Ingredients
Ragi/ Fingermillet Flour - 1/2 cup
Wheat Flour - 1/2 cup
Powdered Sugar - 1/4 cup
Cardamom powder - 1/4 tsp
Cashew - 6 chopped
Ghee - 3 tbsp
Milk - 2 tbsp
Method
- Melt Ghee in a wide pan, add the chopped cashew and fry until golden. Strain and set aside. Now keep the flame on medium to low and add both flours (ragi & wheat), fry it for few minutes
- Fry until the flours turn golden and releases a lovely aroma. Take care not to burn the flour. Transfer to a plate and spread it. Add the powdered sugar & cardamom powder.
- Mix everything so that it is well combined. Now add the fried nuts and milk. As the flour is still warm hold the flour firm to form balls/ laddu. Repeat the same until all the flour is used up to make laddu
Serve and enjoy ;-)
Cooks Wisdom
- Make sure not to burn the flour while frying it in the ghee
- You can also add raisins but I didn't add them
- Adding cardamom powder gives additional flavor you can skip if you don't like the taste of it.
- Do not add more than 2 tbsp of milk but you can add few more tsp if you find its hard to shape laddu. If you add too much of milk the laddu will not be firm and result in soggy laddu
- You can powder 6 tbsp of sugar along with cardamom like I did. These laddu are perfect in sweetness so do not add more sugar unless you want it too sweet.
- You can alternately add melted jaggery syrup to make laddus
