Paneer Koftas are soft sponge like Indian cottage cheese balls deep fried and serves as a snack or added to a creamy curry. These koftas are really hard to resist, the other day I planned to make a creamy kofta curry and just when I finished making the koftas the power went off and I ended up serving these koftas as a snack. Nevertheless they were well received by everyone. The kofta fillings are mildly spice and perfect with a hot chilli sauce, you can go ahead and more spices and make it more hot. These same koftas can be made to be dipped in a curry for a creamy kofta curry.

PANEER KOFTA | EASY PANEER SNACK RECIPE

Recipe Source - Own
Prep time - 10 mins
Cook time - 10 mins
Makes - 8-10 nos medium koftas
Serving suggestion - along with tomato ketchup

Ingredients

Paneer - 3/4 cup (crumbled/ shredded)
Potato - 1 large (cooked & mashed)
Cornflour - 3 tbsp (acts as a binding agent, replace with breadcrumbs if the cutlets have too much moisture)
Pepper powder - 1/3 tsp
Ginger & chilli paste - paste from 1"ginger + 3 green chillis
Salt - to taste
Oil - 3/4 cup to deep/ shallow fry

Method


1. Peel skin of potato and chop into chunks, boil 2 cups water and add the cut pieces to it. Let it boil for 8 minutes until fully cooked. Discard the water and mash completely. Let this cool down.
2. In a bowl add shredded paneer, pepper, cornflour, ginger-green chilli paste, salt and the cooled mashed potato.
3. Knead to form a soft dough, taste to check for spices. You can add more spices at this stage if you are making it spicy.
4. Form firm balls with the dough using the palm of your hands, you can grease your palms for a smooth finish.
5. Once all the dough has been made into balls. Heat oil in a kadai / wok.
6. Once the oil is medium-high heat, add one ball at a time and fry until golden turning sides.
7. Using a slotted spoon drain the kofta from the oil, and place on a kitchen towel. 
8. Repeat the same for the remaining koftas.
9. Serve warm with tomato ketchup.

Cooks Wisdom

Tip 1.

1. You can add more spices like turmeric, red chili, garam masla, coriander for a little spicy version. 

Tip 2

2. Add corriander/ mint leaves and onions for more flavor, I have made them mild.

Tip 3

3. Cornflour helps in good binding and adds crispness to the koftas.

Tip 4

4. You can add these koftas to any kurma/ creamy tomato/ cashew curry.
