Spicy Diamond Cuts Recipe | Savoury Diamond Cuts Step by Step | Christmas Palaharam Recipe

Along with all the cakes and bakes that we make for Christmas Amma always makes a list of palaharams to distribute for near and dear. Last week I posted Kulkuls which is more of the sweet snack (palaharam) for Christmas, this savoury diamond cuts is a savoury/spicy snack which is very simple and quick to do. Spicy diamond cuts are a simple crunchy snack that is easy and quick to do. With everyday ingredients in anyone's panitry. The secret to this recipes is in a ground paste that gives lots of flavor to these diamons cuts. You can alter the paste according to your taste depending on your spice tolerance. Personally I find them perfect in spices. I took the step wise pictures with lights on in the kitchen so please bare with me




SPICY DIAMOND CUTS RECIPE

Makes - 300 gms
Prep time - 10 mins
Cook time - 10 mins
Storage - upto 3 weeks in an air-tight container

Ingredients

For Dough

2 cup Maida/ All purpose flour
1/2 cup wheat flour
1 tbsp of white sesame seeds
Hot oil - 2 tbsp
Salt to taste
Oil - to deep fry

To Grind to a paste

4 dry red chillis
4 pods garlic
1 spring curry leaves (around 10)
1 and 1/2 tsp cumin/ jeera

Method

1. In a bowl combine both flours -all purpose and wheat flour, mix the salt and set aside. Make a course paste with the dry red chillis, garlic, cumin and curry leaves with 3 tbsp of water
2. Add the paste and 2 tbsp of hot oil and mix well into the flour. Knead it to chappathi dough with some water. Cover the dough and set aside for 30 minutes. Later divide the dough into equal parts and start rolling the dough thin using a rolling pin. Using a knife cut into diamonds and using a folk poke the diamonds to avoid it from puffing while frying
3. Heat the oil in a wide and thick bottom vessel, I usually use an iron skillet. Once the oil is nice and hot add a small pinch of dough it has to touch the bottom of the vessel and start sizzling, changing colour in 20 seconds. Now add the cut diamonds batch by batch  making sure you do not over crowd it, take care not to burn them else their taste also changes. Using a slotted spoon remove the fried diamond cuts place on a kitchen towel or vessel to drain excess oil
4. Once it completely cools down store in air-tight container for upto a month



Cooks Wisdom

Tip 1

- Adding hot oil to the dough helps the dough to retain softness and adds flavour, you can add ghee/ butter instead of oil for better flavour

Tip 2

- If you do not want to add red chillis skip it and add re chilli powder

Tip 3

- Adding sesame seeds gives a good crunch and taste to these diamond cuts, you can use black sesame seeds too

Tip 4

- Make sure you do not over fry the diamond cuts the taste might change

  7. Child hood Favourite dish. We use to make Sweet or Salty. U made in a new way(Spicy) but perfect with a cup of tea or coffee.
