One more day for Christmas and if you still one of those last minute cooks wondering what to cook/ bake for your family and loved one's. I am here for your rescue :P . Make these warm cinnamon rolls for your breakfast table and surprise your dear ones and you are sure to see a smile on their faces. They are low calorie, eggless and definitely delicious till the last bite. Christmas calls for loads of baking and cooking and I am pretty sure you have this thought of "I am sure going to take a resolution to lose weight the coming year" or "I have to google for a good diet plan", common we all worry but no one worries while eating :P Since this recipe calls for no eggs this is sure a less-fatty recipe that you can try to impress. With no further delay lets move on to the recipe. EGGLESS CINNAMON ROLLS RECIPE

Serves - 10
Prep time - 30 mins
Bake time - 25 mins
Ingredients
For rolls
All purpose flour - 3 cups + extra for kneading
Instant Yeast - 1 sachet
White sugar - 1 tsp
Salt - 1/4 tsp
Butter - 4-5 tbsp, melted
Water - 1 cup
Brown sugar - 1/4 cup
Cinnamon powder - 2 heaped tbsp
For vanilla icing
Powdered sugar - 1 cup
Cream - 1 tbsp
Vanilla extract - 1 tsp
Method
1. In a microwave heat the water for 20 seconds, it must be warm to touch not to hot (its its hot it will kill the yeast). If you do not own a microwave simple warm the water on a stove top. Add 1 tsp water mix well add the yeast and set aside for 10 minutes. The water should be frothy similar to pepsi/ cola.
2. In a large mixing bowl add the flour, salt and mix well until combined. Now add 4 tbsp of butter, activated yeast mixture and knead to a smooth dough.
3. If you find the dough sticky transfer to a floured surface and knead until soft and pitable for 2-3 minutes.
4. Grease a bowl well with oil and add the dough to it, cover with cling wrap/ wet hand towel and set in a warm place to double in size (1 and 1/2 hrs). I prefer to keep mine in a closed oven/microwave without power on.
5. Once the dough doubles in volume, transfer to a counter top and flatten with a rolling pin around 1 inch thickness to a long rectangle shape. Brush butter to the surface, in the meantime mix brown sugar , cinnamon and add this to the buttered surface. Dab/ brush more melted butter on the rolls.
6. Tightly roll the dough, using a knife cut into 1 and 1/2 inch thick slices and place on a well greased baking tray to further double in size. Cover with wet towel.
7. Once doubled pre-heat oven to 350 F/ 170 C for 10 minutes and place the baking tray in the centre of oven and bake for 20-25 minutes (please take care and check after 20 minutes oven to oven temperature and time may differ).
8. Once done remove from oven and place on a cooling rack to be frosted.
Icing
1. In a small bowl add the icing sugar and add 1 tsp of cream at a time and mix well, the consistency should be creamy yet easy to pipe, add the vanilla extract and transfer to a piping bag.
2. while the rolls are still warm frost them with sugar icing and let them set for a minute
if you have more icing don't mind to lick them to glory ;-).
Serve warm and enjoy.
Cooks Wisdom
Tip 1
I used quick rise yeast for this recipe (hovis brand).
Tip 2
The rolls are not sweet so the frosting is what gives these rolls sweetness, you can use chocolate or nutella too for a chocolaty taste.
Tip 3
You can add white sugar instead of brown sugar for more sweetness.
Tip 4
If you are using powdered sugar add 2 tsp of cornflour and then follow the procedure to do the icing.
Tip 5
These rolls are eggless and are not very buttery in taste, the cinnamon and frosting are the flavouring agents so don't miss to add them. You can do variations by adding a savoury filling.
